I have to admit that this one surprised me. My idea of clam chowder is a bunch of clams floating in heavy cream :) So I haven't tried making it since I went on Program. But this ... wow! ... it actually comes out creamy and (wonder of wonders!) it passed the DH Test!!! - Anni
Ingredients
2 Cans Clams - Chopped
1/2 Cup Water
2 Cups Potatoes - Diced
1/3 Cup Celery - Chopped
1/3 Cup Onion - diced
White or black pepper
2 Cups Corn (optional)
2 Cups Skim milk
3/4 Cup Evaporated skim milk
1 Tablespoon Corn starch
Preparation
Drain clams, reserve juice
Mix water, potatoes, celery, onion, pepper, 1/2 cup clam juice - bring
to boil, then simmer for 7 mins.
Add corn, simmer 5 mins.
Add milk and 1/4 cup evaporated milk, simmer 5 mins.
Remove one cup of the soup and blend it smooth in blender or food
processor. Add it back in. (Here's the secret on how it seems so silky
using skim milk; this thickens it up nicely.)
Add clams
Mix 1/4 evaporated milk and the cornstarch, add in and stir constantly
until thick
